Classic French style wedding and celebration cake! Profiteroles are filled with crème patissière and then dipped in caramelised sugar which when set gives the cake its name ‘crunch in the mouth’. Decorated traditionally with nougatine curls and sugar almonds with an optional spun sugar veil, or alternatively with fresh berries and nougatine berry basket for a summer feel. Price per portion is £6.50 The cake in the adjacent picture is for 100 servings.
